Mosel-Saar-Ruwer:

(MOH zel zar ROO ver)—This dramatically beautiful region of western Germany produces exceptional white wines from the Riesling grape. Among the lightest in Germany, these wines usually contain less than 10% alcohol and they are generally delicate, fresh, and bursting with flavor. With its flowery tastes and aromas, Mosel Riesling is a great wine to drink in the spring. Look for the words “Erzeugerabfüllung” or Gutsabfüllung,” which indicate that the wine was estate bottled and not mass-produced.


Riesling:

(REESE ling)—a grape that comes mostly from the Mosel and Rheingau regions of Germany (where it is a noble variety), the Finger Lakes region of New York, and Alsace region of France, and Austria. Although often thought of as “sweet,” many Rieslings are quite dry. The word trocken on German bottles indicates dryness. The trademarks of Riesling are high acidity, low to medium alcohol levels, and aromas and flavors that range from fruity and flowery to mineral. Also called Johannesburg Riesling or White Riesling.

Rosso di Montalcino:

Montalcino is Tuscany's rocky, hilly, walled medieval village, and located 1800 feet above sea level. Vineyards planted on the cooler northern slopes tend to produce wines that are provocative and aromatic, while the warmer southern slopes tend to produce wines with more power and complexity. The top producers in the area have vineyards on both slopes, and make use of a blend of both styles. The Rosso di Montalcino by law is aged one year as apposed to the four year aging in a Brunello di Montalcino and comes from the less ideal vineyards in Montalcino which means the yield of the Rosso is not as limited as the Brunello di Montalcino. It can range from a soft, young style to a wine capable of long aging.

Corn Chowder With Chili Peppers

1 tbsp unsalted butter
1 tbsp vegetable oil
1 onion, diced
1 poblano chili pepper, seeded & diced
2 garlic clove, minced
1 jalapeno pepper, seeded & diced
3 cups milk
2 cups fresh corn kernels (from 2 to 3 ears)
1 tsp salt
1 red-ripe tomato, peeled, seeded & coarsely chopped
1 tbsp chopped fresh cilantro
1 lime, cut into wedges

Preparation

Heat butter in a small stock pot until melted. Add the chopped vegetable (except corn and tomatoes) and saute until soft and onions are translucent.

Stir in the milk and let come to a simmer. let the mixture simmer for 2-5 minutes so the flavors marry.

With a slotted spoon, remove 1-1/2 cups solids from the soup and puree until smooth. Return to the soup. Heat gently just to warm through. Stir in corn and tomatoes. Season to taste with cilantro and salt.

Bring to a boil, reduce the heat, and simmer gently until the corn is tender, about 3 minutes.

Ladle into warmed bowls. If you like, garnish the soup with a bowl of lime wedges on the side.
